But how do you do this for legacy OS's?

I'm in the middle of trying to convert SCO and OS/2 to a VMWare image, using dd.

So far i've failed miserably :)

use the converter cold-clone boot-cd.

I don't have a license for ESX yet (and as far as I can tell that's the only way to get the boot cd, please correct me if I am wrong)

I'm trying to convert them to use on VMWare Fusion as a proof of concept for one of my clients, before they spend on the licenses and such.

unfortunately, yes.
 
I've used VMWare Converter to convert some of our physical machines to virtual machines directly into Virtual Center. Great and time saving tool. I'm not sure if it works on older OS's (pre-Windows 2000, NT) but it does work with Windows 2000 and later.
