Unfortunately, they are in a simple Syba 5-bay enclosure (part # SY-ENC50118). I was able to find a new RR644L card on Ebay for $50. Hopefully that does the trick, otherwise, I'll probably try a new enclosure.

Well, since they definitely get past bootup, and the array comes up shortly (before bombing out a few mins after boot), it could be the card. I was actually wondering if that may be the issue (again, since it affected all the drives). I could try getting another card and seeing if it works fine...

I actually didn't realize there was a new nvidia driver update (9/30/2020). This issue has persisted over multiple driver updates, but it looks like this one may have done the trick!
